SOUTHERN HOE CAKES---serves 4
Ingredients

cup
cornmeal from Huckleberry Moon
1
cup
all purpose flour
2 1/2
teaspoons
baking powder
2
Tablespoons
sugar
1
teaspoon
salt
2
eggs
3/4
cup
buttermilk
1/3
cup
water
1/3
cup
melted butter
Bacon grease or vegetable oil for frying
Instructions
In a large bowl add cornmeal, flour, baking powder, sugar, salt, mix well.
Make a well in the center and add the eggs, buttermilk, water and melted butter. Mix until combined.
In a heated cast iron griddle or skillet heat a couple of tablespoons bacon fat or vegetable oil.
Drop about three tablespoons batter into the griddle. Fry hoe cakes until the edges start to bubble, flip over and cook until brown.
Notes
Serve immediately with syrup or with a roast to sop up the jus.
