Lemon Lavender Chicken

A lovely tangy sweet chicken thigh recipe

Ingredients

  • 4 each Chicken thighs skin on
  • 1 tsp Herbes de Provence
  • Salt and Pepper to taste
  • 1/4 cup Lemon lavender jelly
  • 1/2 cup dry white wine
  • 1/2 cup heavy cream
  • 1 tbsp butter

Instructions

  • Preheat oven to 350 degrees
  • Grease a 5x5 baking dish
  • Place chicken in baking dish, skin side up.
  • Sprinkle evenly over the chicken the Herbes de Provence, salt, and pepper
  • Bake 15 minutes

Sauce

  • In a small saucepan place lemon lavender jelly, wine, and cream.
  • Simmer until mixture has reduced in half
  • Add butter and simmer an additional 10 minutes
  • Pour sauce over chicken and continue cooking chicken until internal temperature reaches 165 degrees.
  • Serve with a medley of sauteed summer squash.
