SOUTHERN HOE CAKES---serves 4
Ingredients
- 1 cup cornmeal from Huckleberry Moon
- 1 cup all purpose flour
- 2 1/2 teaspoons baking powder
- 2 Tablespoons sugar
- 1 teaspoon salt
- 2 eggs
- 3/4 cup buttermilk
- 1/3 cup water
- 1/3 cup melted butter
- Bacon grease or vegetable oil for frying
Instructions
- In a large bowl add cornmeal, flour, baking powder, sugar, salt, mix well.
- Make a well in the center and add the eggs, buttermilk, water and melted butter. Mix until combined.
- In a heated cast iron griddle or skillet heat a couple of tablespoons bacon fat or vegetable oil.
- Drop about three tablespoons batter into the griddle. Fry hoe cakes until the edges start to bubble, flip over and cook until brown.
Notes
Serve immediately with syrup or with a roast to sop up the jus.
