SOUTHERN HOE CAKES—serves 4

SOUTHERN HOE CAKES---serves 4

Ingredients

  • 1 cup cornmeal from Huckleberry Moon
  • 1 cup all purpose flour
  • 2 1/2 teaspoons baking powder
  • 2 Tablespoons sugar
  • 1 teaspoon salt
  • 2 eggs
  • 3/4 cup buttermilk
  • 1/3 cup water
  • 1/3 cup melted butter
  • Bacon grease or vegetable oil for frying

Instructions

  • In a large bowl add cornmeal, flour, baking powder, sugar, salt, mix well.
  • Make a well in the center and add the eggs, buttermilk, water and melted butter. Mix until combined.
  • In a heated cast iron griddle or skillet heat a couple of tablespoons bacon fat or vegetable oil.
  • Drop about three tablespoons batter into the griddle. Fry hoe cakes until the edges start to bubble, flip over and cook until brown.

Notes

Serve immediately with syrup or with a roast to sop up the jus.
